Behind AOI by KAIYŌ is R&D Director Kiefer Ko. Having grown up exploring global cuisines and dining at fine restaurants, he notes that many high-end dining options in Hong Kong come with steep price tags that can put younger consumers off. His goal is to create a modern izakaya dedicated to young people — a place where friends can gather, share skewers, sip sake, and enjoy a lightly tipsy evening together. While he sets high standards for the restaurant’s design and visual appeal, he places even greater importance on food quality and value. “Young consumers care about experience,” he says. “In the future, we will gradually introduce interactive elements so the restaurant itself can lift the mood and fully immerse guests in this modern izakaya atmosphere.”
